� <br /> • Page 2 <br /> Caribou Coffee Orono <br /> September 22,2004 <br /> • This facility needs a rinse/dump sink (a hand sink is not approved for this <br /> purpose). <br /> • A washable and cleanable ceiling will be required over the coffee shop. This <br /> may be the existing drop ceiling of the grocery if it is smooth and easily <br /> cleanable. <br /> • A sneeze guard will be required around the facility, in the same fashion as the <br /> Eden Prairie unit. <br /> • Storage for employee personal items will be required. <br /> • A Managers desk and file area will be required for paperwork. <br /> Your request for an onsite visit from this office was denied because Pam Foster, <br /> Hennepin County Environmentalist, recently inspected Rick's Super Valu in Orono on <br /> August 31, 2004. At that time she identified that there was space in the back of the <br /> grocery that currently was warehouse space that could be converted and finished as a <br /> storage area. Ms. Foster also noted that the employee storage area was at full capacity <br /> and could not accommodate additional employee belongings. <br /> Ms. Foster also noted that construction, or at least demolition of the former customer <br /> service counter had started on this project. Please remember that this facility cannot be <br /> constructed without approval from this office. Hopefully, accommodations were made to <br /> contain dust and debris while taking out the service counter as not to contaminate other <br /> food in this facility. Please cease any further construction until approval is granted from <br /> this Department. <br /> Equipment <br /> 1. Ali food service equipment must meet the applicable standards of construction of the <br /> National Sanitation Foundation (NSF). Only NSF, UL-Sanitation or ETL-Sanitation <br /> listed equipment is allowed. <br /> 2. Provide equipment manufacturers specification sheets for all food service equipment <br /> for this unit. <br /> 3. Provide the shop drawings for all of the custom fabricated items for this unit. <br /> 4. All primary food preparation surfaces (preparation tables and counters) in the food <br /> service operation must meet NSF standards, such as stainless steel or solid services <br /> like CorianO and Wilsonart0. <br />
