(48) Employees shall not use tobacco in any form, except in designated <br />smoking areas away from food and utensils, and faod storage and handling <br />areas. Ash tray on shelf in storage area. <br />7. (443) Store ice scoops in the ice bin with handle up or inverted outside <br />the ice bin in a clean place. One scoop had handle in ice, other scoop was <br />upriqht atop ice machine. <br />8. The porch is not wind and rain proof. Either upgrade area or discontinue <br />use fer any food handling or storage or utensil cleaning operations. <br />9. (978) Store detergents, sanitizers, or related compounds, and drying <br />agents separate from and below food and equipment. Remove handsoap from <br />top of ice maker. <br />10. (663) Remove wood from middle compartment of three compartment sink. <br />Utensils and equipment shall be washed in three compartment sink in the <br />following manner: Thoroughly wash in the first compartment with a hot de- <br />tergent solution that is kept clean; rinse free of detergent and abrasives <br />5y im^.:ersion in clean warm water in the second compartment; sanitize in <br />third compartment in an approved manner; and air dry on a drainboard. <br />11. (91B) Repair ceiling and maintain it in good repair. Replace missing <br />panels. <br />12' Ventilation hood ordered in 1983 not provided for range, oven, and grill. <br />13. (74A) Store clean utensils covered or in an inverted position. Provide <br />approved shelf under prep table, rather than balancing pan on braces. <br />14. (67) Provide and use a test kit to check the sanitizer concentration in <br />the three compartment sink. Test kits are available from Economics Lab- <br />oratory stock room 451-5642 or from Acro Dishwashing Service, 2064 1st <br />Street, White Bear Lake, 426-3372. <br />15. (12A) Milk shall be served in the individual unopened original container <br />or dispensed from an approved refrigerated bulk milk dispenser. <br />16. (71) Clean up mixer and maintain clean. <br />17. (55) Provide and use approved scoop (with handle) to dispense food. Dis- <br />continue use of cups in bulk foods. <br />18. (56) Discontinue use of cracked wooden cutting board and remove from <br />facility. <br />19. (59) Provide smooth cleanable surface on ;helves under countt-r. <br />
