Re: Orono High School Exhaust Hood
Dear Mr. Rettke:
The submitted plans and specifications appear to be in general conformity with the
standards of Hennepin County Ordinance Number 3 and Minnesota Rules, Chapter
4626. These plans are now approved. Although this plan has been approved, the
following items listed below need to be addressed prior to completion of the project:
Equipment
1. Ensure that there are stainless steel trim pieces added as the four hoods are
placed together to close any gaps between hood sections. Additional sealing with
caulk may be needed if these are not tight fitting to prevent the collection of
debris.
2. All equipment producing heat, steam, grease and/or vapors must be located
sufficiently underneath the hood to provide a minimum of a six inch overhang
extending beyond the front edge of the equipment to the interior edge of the
hood.
Room Finishes
3. The half wall between cooking lines under the hood must have material finishes
that are smooth, cleanable, durable, such as ceramic tile, stainless steel, etc.
Any grout lines must have a penetrating seal. The base of the half wall should
have a curved mopping radius at the floor. What materials are proposed?
4. Ceiling tiles must be smooth, cleanable, nonabsorbent, and light-colored.
Fissured, perforated or rough acoustical tile is not permitted. Ensure that any
modifications to the current ceiling tiles meet these criteria.

5. The floor tile and base cove needs to be finished from a previous remodel of the
Ala Carte room off the main kitchen. Ensure that the base tile has a % inch
mopping radius where it meets the floor tile.
Miscellaneous
6. Obtain all necessary state and local permits, approvals and inspections.
7. Please notify me at 612-543-5207, prior to use of the equipment, for a
construction inspection appointment.
8. The is facility may not be constructed, remodeled or converted except in
accordance with the plans and specifications as they are now approved by this
department. Please contact me for any proposed changes or additions.
9. A copy of this letter must be on the job site and be readily accessible to the
general contractor.
Thank you for your consideration and cooperation in addressing the items outlined in
this letter. I shall remain available for consultation and review of your facility's
construction progress.
