I have had previous discussions with the principal, office staff and foodservice regarding this stand in front of the office. Please select one of the following options to achieve compliance with Hennepin County Food Protection Ordinance 3: 1. Cease and desist the popcorn stand operation. 2. Locate the machine in the school's licensed kitchen for operation by trained food handling staff. Check with the City Building Official to see if this unit must be located under an exhaust hood. Popcorn may then be served in the cafeteria or if it is prebagged and sealed, it may be distributed at the present location in the hallway. 3. Construct an approved foodservice stand, incorporating handwashing facilities, and obtain an additional license. Plans must be submitted for approval to our department and the City of Orono prior to construction. A basic 3-hour, food handler training course would be required for the staff_ of the concession stand. Enclosed is a plan review application and construction guide. Please notify me in writing of which option you have selected to achieve compliance with Hennepin County Ordinance 3, prior to September 1, 2004.
