Gear Mr. Blaser: This correspondence is to confirm receipt of the plans covering the proposed new food service to be located in the Minnetonka Center for the Arts, 2240 North Shore Drive in Orono, Minnesota. The plans as submitted do not meet all the requirements of Hennepin County Ordinance Number 3 and are not approved. The following issues must be resolved before this plan will be approved: The submitted plans and specifications appear to be in general conformity with the standards of Hennepin County Ordinance Number 3 and are approved. Although this plan has been approved, the following items listed below need to be addressed before the start of construction: Menu: 1. Submit a menu and an estimate of the number of ineals to be served/day. Equipment 1. All food service equipment must meet the applicable standards of construction of the National Sanitation Foundation (NSF). Only NSF, UL-Sanitation or ETL-Sanitation listed equipment is allowed. 2. Provide sufficient refrigeration is to hold all potentially hazardous food products at 41° F or less. Provide additional refrigeration in the kitchen area based on the menu and projected meal counts provided. 3. Provide specifications on a NSF listed water heater that can provide an adequate amount of hot water during peak hot water use periods. 4. Any used or existing equipment must meet the NSF standards, be listed, and be in "like new" condition. An Equa!Opportunity E,mployer Recyded Paner . / • Page 2 January 14,2002 VentilatioNEquipment Installation 1. he hood and canopy construction must meet the appiicable standards of the ational Sanitation Foundation, the Uniform Mechanical Code, and the amended Minnesota Building Code covering commercial kitchen ventilation systems. 2.;� Provide properly installed sheets of stainless steel on the wall behind the grease ` producing equipment from the bottom of the hood to the top of the floor base cove. Plumbing 1. A licensed plumber shall install all plumbing according to the Minnesota Plumbing Code. In addition, plumbing plans must be submitted to the Minnesota Department of - Health for review and approval before installation. . 2. Check with the local municipality for their regulations regarding grease trap requirements. If a grease trap is installed, the lid should be mounted flush with the floor and it shall be accessible for cleaning. Sinks 1. - Either adequate space (12 inches) or a shield must be provided between the hand sink and coffee maker to preclude contamination by splash. 2. The size of the compartments of the three-compartment utensil-washing sink must be large enough to accommodate the largest utensil/equipment that is to be cleaned and sanitized. 3. Provide hooks or hang-up brackets at the utility sink for the storage of mops and brooms. Storage 1. Adequate approved NSF shelving for the food service operation must be provided to ensure that food products, utensils, or single service articles are stored at least six inches off the floor. 2. Provide an area for storage of employees' personal belongings that is separate form food, clean equipment, and single service supplies. Employee lockers, if used, must be wall mounted or on six-inch legs. 3. Provide a separate storage area that is not adjacent to or above food or food service items for cleaning chemicals. 4. Seal all annular openings around pipes and other conduits that pass through the walls or floor. 2. Ail junctures between the wall surFace and the edges of attached equipment must be sealed with approved caulk/sealing compound (e.g. three-compartment sink, hand sink, etc.). 3. All countertop equipment must be easily moveable, on 4-inch legs, or sealed in place as to be easily cleanable. ' Room Finishes , 1. Toifet rooms must have self-closing doors, adequate ventilation, hand cleanser, single use towels or hand drying devices, tissue paper and covered waste paper receptacles. 2. All doors to the outside of the establishment must be self-closing and vermin proof. 3. The walls and ceilings in the food preparation, utensil washing, janitorial, and toilet . , ' room areas must be smooth, durable, non-absorbent, and easily deanable such as , stainless steel, ceramic tile, or fiberglass reinforced panels (FRP). In areas where paint is permittable, the finish shall be light in color, smooth, durable, and easily cleanable (e.g. high gloss enamel). Specify the wall and ceiling finishes. 4. The floors in the food preparation, food storage, utensil washing,janitorial, and toilet rooms must be of a smooth durable material with an integral coved base at the walVfloor junctures. Approve flooring surfaces include ceramic tile, quarry tile, and terra�o. Tile shall be installed with an epoxy or other water-resistant grout. Specify the floor finishes. 5. The floor in and about three foot peripheral area of the serving counter must be smooth, easily cleanable, and non-absorbent. Provide a transition strip between different floor coverings(example: quarry tile to carpet). 6. Outside garbage and refuse containers, including compactors, must be stored on a smooth and non-absorbent surface. Food Protection 1. Food on display on the serving counter must be protected from potential contamination from coughs, sneezes, and improper handling through the installation of properly constructed and installed food shields, the use of packaged food items or other effective means of protection such as hinged lids or covers. > • Page 4 January 14,2002 Lighting 1. Install a sufficient number of light fixtures in the food preparation and warewashing areas to provide a minimum of 70-foot candles of light at 30 inches off the floor. Provide at least 20 foot candles of light in storage rooms. 2. Lights over exposed food storage, food preparation, food display facilities, and utensil cleaning and storage areas must be shielded or shatter-resistant. Minnesota Clean Indoor Air Act(MCIAA) A sign must be posted at all public entrances to the facility stating that°smoking is prohibited except in designated areas"or"this facility is non-smoking in its entirety." Miscellaneous Obtain all necessary state and local permits. At least one employee of this establishment must be certified through an approved food handlers'course,such as"ServSafe." Submit the required plan review fee of$597.00. This facility may not be constructed, remodeled or converted except in accordance with the plans and specifications as approved by this Department. Spring II classes in those departments will start the week of March 18. Our Grand Opening and Anniversary The Minnetonka Cerrter for the Arts was founded on lune 17, 1952,by an enthusiastic group of volunteers who wanted a place in the Lake Minnetonka area to exercise their creativity.That means that the center tums 50 years old next wmmer.Andzn�aturally,that means a birthday party—in this case,one that lasts a whole year.The celebration year slogan is"50 More!" After we move, contractoxs will do asbestoS abatement on the old building,demolish it and then do the landscaping and paxking lots. We need to ask for your cooperation during the move and through the spring. Please pay careful attention to this memo. � We would love your assistance moving boxes, furiuture and eqzupment. Sign up at the front desk. On Sunday,March 3,we'll have a moving party/pot luck, 1-7 pm. Help move boxes in the afternoon and bring a dish to share. Or just bring a dish to share. (We need all the help and sustenance we can get.) • Moving Sale–all kinds of MCA stuff–Feb. 13-27 in the Gallery • If you have personal properry here—including fuiished or unfinished art pxojects—take it home befoxe February 28. The old building will be fenced off and completely inaccessible during asbestos abatement and demolition. Anything left in the old building will disappear with the building. • We anticipate that the phones may not be functioning for periods on Feb. 28 and/or Maxch 1-4. But you can email us at information�u,minnetonkaarts.org or re�istrationnea,minnetonkaarts.org. • Classes start March 4 in the new building (except for Ceramics,Photography, Sculpture arid Glass). They staxt March 18. Register early! � Parking will be scarce until June 15 while the old building is being demolished and landscaping is completed. Please carpool if possible. Be considerate of others... paxk efficiently. Do not park in fire zones! • Accessibility to the new building will be limited until June 15. Please call the office if you have special needs. • The main entrance to the new building will not be accessible until June 15. Enter on the East or West end.
