Dear Mr. McPherson:
The submitted plans and specifications appear to be in general conformity with the
standards of Hennepin County Ordinance Number 3 and Minnesota Rules, Chapter 4626.
These plans are now approved. Although this plan has been approved, the following items
listed below need to be addressed prior to the start of construction:
• I have not received a response from the discussion items of our meeting on
April 27, 2010. The following items were discussed; however we have not
received a written response. Provide a response.
• In use food refrigeration in kitchen.
• Ice maker area finish schedule.
• Drawings for the Produce Prep Room showing the prep sink, ware wash
sink and the hand sink.
• Decision on larger dish machine, or the under counter model.
• A final up to date plan (including plumbing plan also) that is used for
construction including all equipment must be submitted for the file.
• Please review your response letter dated 4/20/10. "Will provide" items still
have not been provided. Provide all missing information.

Equipment
1. This item not addressed in your April 20th response. Ensure that the new equipment
meets the applicable standards of construction of the National Sanitation Foundation
(NSF). Only NSF, UL-Sanitation or ETL-Sanitation listed equipment is allowed. All
equipment must bear one of the following marks:

2. There is no refrigeration in the kitchen. Provide some refrigeration (under counter?)
in the kitchen for open, in-use foods. Provide sufficient refrigeration is to hold all
readily perishable food products at 41° F or less.
Plumbing
3. Provide information on the City of Orono's requirements regarding the grease trap.
Please show it on the plumbing plan.
4. Provide a final plumbing plan.
Sinks
5. Provide a prep sink for the Produce room and show it on the plan.
6. Provide a ware washing sink in the produce room and show it on the plan.
7. Provide a decision on dish machine (under counter or larger full machine). If a under
counter dish machine is specified, the deli must provide single use eating utensils
and dinner ware. Remember for spacing purposed, hot water sanitizing requires a
minimum of three drying rack spaces and for chemical sanitizing; a minimum space
for five dish racks is required. Show the machine chosen and drying rack space on
the plan.

Storage
8. Adequate approved NSF shelving for the food service operation must be provided to
ensure that food products, utensils, or single service articles are stored at least six
inches off the floor. The kitchen seems a little short on storage, when you consider
storage for packaging for "grab and go" items. Provide additional storage shelving
and maximize storage. Show this on the plan.
Room Finishes
9. Show the location of the garbage area along detailing the smooth and non-absorbent
surface.
Miscellaneous
10. Obtain all necessary state City of Orono Building permits.
11. At least one employee of this establishment must be certified through an approved
food handlers' course, such as "ServSafe."
12. Please notify me at 612-543-5213, prior to completion so a construction inspection
may be scheduled.
13. An invoice will arrive for you to apply for a food license Hennepin County to
operate a food service establishment. Please provide the required information
and submit payment. This must be complete prior to the final inspection from
this Department.
14. This facility may not be constructed in any way except in accordance with the
plans and specifications as they are now approved by this Department. Please
contact me for any proposed changes or additions.
15. This establishment cannot open for business until it has been inspected and
approved by this Department.
16. Food deliveries cannot be accepted until this Department gives approval.
A COPY OF THIS LETTER AND MY LETTER DATED APRIL 19, 2010 MUST ALWAYS
BE ON THE JOB SITE AND BE READILY ACCESSIBLE TO THE GENERAL
CONTRACTOR.
