ORONO GOLF COURSE <br />OPERATING STANLARDS <br />The following set of standards is included to help illustrate existing and future operating practices. Many <br />of these standards are already in place and have been a part of the Orono Golf Course operation for many <br />years. In addition, other new standards are included that will be necessary due to the facility improve* <br />ments described in the previous section. <br />Clubhouse Standards <br />1.Tee Time Access. In order to promote the growth of as large a customer base as possible, the tee <br />time reservation system is designed to provide fair and equitable access for all players. <br />2.Staffing. The clubhouse counter will be adequately staffed at all times to accommodate expected <br />customer traffic levels. A wide variety of duties are executed including golf fee sales, telephone <br />answering, sales of equipment or apparel, and general service. <br />3.Cleanliness. The clubhouse will be maintained in a clean condition throughout the entire day by <br />each clubhouse employee on duty. Staff will be responsible for cleaning all tables, disposing of <br />trash, and straightening tables and chairs in both the interior and exterior service locations on an <br />ongoing basis. <br />Ail floor areas will be monitored for cleanliness and swept or vacuumed as necessary, windows wiil <br />be cleaned as needed, arxt exterior areas will be kept clean at all times. All trash receptacles, both <br />interior and exterior, will be monitored and emptied as necessary. Rest rooms will be monitored <br />on a periodic basis and cleaned as necessary. <br />4.Golf Cars. AO goH cars wnll be inspected daily to insure clean and safe operating conditions are <br />met. All cars will be inspected for fuel level, tire pressure, cleanliness, accelerator and brakes <br />before staging. Daily cleaning of golf cars will include washing, removal of all trash, wiping down all <br />parts of the car including beverage holders, front compartments, tires, seats, and floor mats. <br />Tee Time Management Standards <br />1.Cash Register. A programmable cash register with price look-up (PLU) keys will be utilized in order <br />to efficiently track all categories of sales. The cash register will have the capability to compile <br />individual sales into the following categories: green fee, golf car fees, food and beverage <br />products, and golf merchandise. The cash register will have the capability to generate daily sales <br />reports, monthly sales reports, and an annual sales report. <br />Tee Sheets. An accurate accounting of all utilized tee times will be recorded by clubhouse staff <br />on an ongoing basis. At the end of each operational day, a daily summary of statistics will be <br />generated that includes total number of rounds played and utilized tee times by foursome, <br />threesome, and twosome. The day’s weather factors will also be recorded for the morning, <br />afternoon, and evening periods of operation. <br />Monthly Stati^ics. All daily statistics gathered from the cash register and daily tee time counting <br />procedures wili be compiled on the first of each month into a statistical report for the previous <br />month. The report will be organized to compare current month statistics to the matching month in <br />the previous year. Also, a running total wiil be kept in order to compare current year-toKfate <br />statistics virith previous year-to-date statistics. This report is the primary means to analyze business <br />performance on a monthly basis throughout a given season.
